Not much experience on the old one as I only got the old 25G, what I can see is:

All thruster are now movable (ball joints)
More engraved panel lines
More painted white stripes
Crotch armor does not required to be removed in fighter mode
Parts are not as glossy as the old one
Better proportion in all mode

It is not a cover on the new version, you remove the standard and replace with the armored one, and they are about the same size, so no need to remove during transformation.
